I have seen the paradox you point out, bunruh, and wondered about it. Because, while it's clear that God does regret actions, or freedoms he's allowed, or whatever, someone in the Bible tells us that God does not change his mind. Sorry, I don't remember the reference, but I think it's in the first five somewhere - one of the boring ones - and I'm sure you could google it anyway.
Regret is automatically a change of mind, right? And could a god who never changes his mind be anything but omniscient?
